recipe for chicken curry in coconut sauce

Ingredients

  • 2 Tbsps veg oil
  • 1 whole onion chopped, 
  • 2 Clove garlic crushed, 
  • 1 kg chicken[skinless[optional] 
  • 1 small head cauliflower chopped,
  • 1 tsp salt 
  • 2 1/2 Tbsps curry powder, 
  • 150g coconut milk powder dissolved in a 300ml water & strain, 
  • 1/3 cup chicken stock, salt n pepper to taste, 
  • 1 Tbsps chicken masala.
Method
1. Heat the oil in a sufuria and stir in the onions and garlic and cook until tender
2. Mix in the chicken and cook until juice runs clear
3. Mix cauliflower,chicken masala and curry powder in the sufuria, 
4. Pour in the coconut milk and chicken stock and then season with salt and pepper. 
5. Reduce the heat and continue stirring occasionally for 30 min.
6. Remove and serve with vegetable rice and vegetables.
