1. Marinate your boneless chicken on light soy sauce, sugar syrup, pineapple juice, vinegar, salt and food colour for at least an hour
2. Pan fry under low heat or grill under moderate heat.
Method for the Greens
Pre-boil them a little in bicarbonated water before frying them with onions and tomatoes
Method for the Roast Potatoes
Blanche them before deep frying, shallow frying or baking them in the oven until they are tender
