BEEF ESCALOPE RECIPE

Method
1. Tenderize the beef them season it with soy sauce, black pepper, mustard oil and salt.
2. Dip it in a beaten egg and coat with bread crumbs and shallow fry it on a pan.
3. Serve while hot with lyonnaise potatoes and vegetables.

BEEF SISIG WITH RICE AND GREENS

Method
1. Boil beef until tender.
2. Drain the water and dry fry it in garlic, onion and chillies.
3. Add maggi cubes and mayonnaise and stir very well.
4. Finally add in beaten eggs and stir very well.
5. Serve this mouth watering dish with rice and greens.


CROISSANT RECIPE

Ingredients
- 1 Cup milk
- 1 Tbspn butter
- 1 Tbspn sugar
- 1/4 Cup warm water
- 21/2 Cup wheat flour
- Yeast 1 Tbspn
- Salt 1 tbspn
- 1 Cup cold butter (second amount)
Method
1. Combine milk, the first amount of butter, sugar and salt in a pan and boil the mixture.
2. Remove from the heat and cool it at room temperature.
3. While the mixture is cooling, dissolve the yeast into the water and add it to the milk.
4. Add flour into the mixture and put it into a mixer and mix it until the dough is elastic but not sticky.
5. Place it into a bowl and let it rise until it's double it's size for about 11/2 hours.
6. Place it in the fridge and let it chill for at least 30 minutes.
7. While the dough is chilling, soften the remain in butter by pounding it with a rolling pin.
8. Roll out the dough and put into the fridge for 2 hours.
9. When it is chilled, remove from the fridge and repeat the folding and turning twice.
10. Roll the dough into 1/4 inch thickness then cut it into 3 inch squares.
11. Cut the base to form 2 triangles then roll each triangle, starting with the wide side and shape it into a croissant.
12. Place them in a baking tray and let the double in size.
13. Chill them in the fridge for 30minutes before baking them for 15minutes at 350 degrees.

DEEP FRIED TILAPIA FISH RECIPE

Method.
1. Season your fish with lemon juice, salt and soy sauce.
2. Deep fry it on both sides until it's crispy.
3. Serve while hot with chips and salad.


LYONNAISE POTATOES RECIPE

Method.
1. Peel your potatoes and cut them into round slices.
2. Blanch them or boil them in water until they soft but not soggy.
3. Heat oil in a pan and deep fry them until they are crispy.
4. In a separate pan, pan fry them with onions and season them with salt and soy sauce.

YUMMY MEATBALLS RECIPE

Ingredients
- 2 Medium onions finely chopped
- 1 Tbspn margarine
- 500g lean minced beef
- 2 Medium carrots grated 
- 1 Egg yolk
- 1/2 tbspn black pepper
- 1 Tbspn tomato paste
- 11/2cup breadcrumbs
For coating
- 2 cups wheat flour
- 1 egg yolk
- 2 cups breadcrumbs
Method
1. Fry onions in margarine until they are soft.
2. Add tomato paste and cook gently.
3. Remove the pan from fire then add minced meat, grated carrots, salt and black pepper.
4. Add egg yolk and bread crumbs( those 2 for binding).
5. Mix well and mould them into small balls (big ones may not cook well inside).
6. Roll the balls on wheat flour, dip them in the egg yolk and coat them with breadcrumbs.
7. Shallow fry them and mix them with the sauce.

GIZZARD GOULASH RECIPE

Ingredients
- 1/4kg gizzards
- 2 Tbspn tomato paste
- 1/2 pint sour cream
- 2 Cups chicken stock
- 3 Potatoes
- 1 onion
- 1 tbsp paprika powder
- 1 Tbspn butter
- Salt and pepper 
- Wheat flour for dusting the gizzards

Method
1. Slice the onion and fry it in butter.
2. Add paprika 
3. Cut the gizzards into two and dust them with flour.
4. Season them with salt and pepper and fry them and set aside.
5. Separately, dice your potatoes and par-boil them.
6. In the same pan used for frying the gizzards, add onions and fry with the remaining butter to make gravy.
7. Add the tomato paste, half of the sour cream and thicken it with flour and stir them well.
8. Add the potatoes and gizzards and stew them for 1 hour, 10minutes and before serving, add the remaining part of the sour cream.
9. Serve hot with rice.

SPAGHETTI BOLOGNESE AND RICE BOLOGNESE RECIPE

Ingredients
- 1 Large Onion
- 1 Kg minced meat
- 2 Tbspn oil
- 1 Cup water
- Salt
- Tomato paste
- 2 Beef cubes
- Pepper
- 1/4 Tbsp oregano 
- Cheese

Method
1. Sauté your chopped onion in hot oil until they are golden brown.
2. Add minced beef and stir well until all meat is browned.
3. Pour out any excess oil and add in tomato paste, water, beef cubes, oregano, pepper and salt and mix well. 
4. Bring the mixture to boil and cook it until low heat for at least an hour.
5. Serve whil hot over your spaghetti or rice.

Method
1. Deep fry your sausages and set them aside.
2. In a separate pan, dry fry tomatoes and onions and add in your sliced sausages and stir.

- Rice
- Beef (boiled)
- Ginger and garlic
- Black pepper
- Cardamon

- Tomato paste

Method
1. Fry onions, garlic, ginger and clove until golden brown.
2. Add clove, cardamon and black pepper and stir.
3. Add your boiled beef and keep stirring.

4. Add tomatoes and tomato,paste and mix well.
5. Add water and lastly rice and let it cook.
6. End result....very tasty pilau.

Method
1. Boil your pasta and set aside.
2. Cut your condiments into pieces (green pepper, carrots, cucumbers and tomatoes) and mix with the pasta.
3. Add mayonnaise and mix well.

BREAD CRUMBED SPICY CHICKEN WINGS

Method
1. Season your chicken wings with lemon, soy sauce and salt.
2. Dip them in beaten eggs and coat them with bread crumbs before deep frying them.

SWEET AND SOUR CHICKEN SERVED WITH GREENS

Ingredients
- 2 Onions
- 2 Green peppers
- 11/2 cup beef broth
- 1/2 cup mixed pickle
- 11/2 tbspn sugar
- 1 tbspn soy sauce
- Pepper and salt
- 2 tbspn corn flour
- Chicken pieces
- Oil for deep frying

Method
1. Make the sweet and sour sauce by cutting 2 onions and 2 green peppers into pieces and frying them in hot oil.
2. Add in 11/2 cup beef broth, 1/2 cup mixed pickle, 11/2 tbspn sugar, 1 tbspn soy sauce, pepper and salt to taste.
3. Let it cook well as you strain and thicken the sauce with 2 tbspn corn flour.
4. Coat your chicken pieces in wheat flour and deep fry.
5. Add the cooked chicken pieces to your sauce and let them simmer before you serve.

RECIPE FOR DRY FRY MUTTON WITH STEWED POTATOES AND RICE

Method
1. Boil the mutton until it's very soft.
2. In a separate pan, fry onions, garlic, green chillies, soy sauce and salt.
3. Stir in your preboiled mutton and let it simmer.
4. Serve while hot with stewed potatoes and rice.


RECIPE FOR DELICIOUS DOUGHNUTS

Ingredients
- 2 tbspn white vinegar
- 3/8 cup milk
- 1/2 cup sugar
- 2 cups all purpose wheat flour
- 1/2 tbspn vanilla extract
- 1/4 tbspn salt
- Oil for deep frying
- 2 tspn baking powder

Method
1. Stir in the vinegar into your milk and let it stand for some minutes
2. In a bowl, cream in together the shortenings and sugar until smooth.
3. Add in the vanilla extract and beaten egg and combine thoroughly
4. Sift the flour, baking powder and salt and stir in the sugar mixture alternating with the vinegar mixture.
5. Roll out the dough into 1/3 inch thickness on a floured surface.
6. Cut the dough into doughnuts and let them stand for 15 minutes
7. Heat the oil for deep frying and fry your doughnuts on both sides until they are golden brown.
8. Drain excess oil and serve while hot.


RECIPE FOR MANDAZI

Ingredients
- 2 Cups flour
- 1 Egg beaten
- 1/2 Cup sugar
- 1 Cup milk or water
- 2 Tablespoons melted Butter
- 2 Teaspoons baking powder
- Oil for deep frying

Method
1. In a bowl, mix all the ingredients to form a dough that is not too sticky
2. Knead the dough and roll it out on a surface with some flour
3. Cut the rolled out dough into triangles or squares or any desired shape
4. Deep fry both sides until golden brown.

WET FRY SPICY BEEF WITH MUKIMO

Method for wet fry spicy Beef
1. Boil the beef until it's tender
2. Fry onions, garlic and tomatoes.
3. Stir in black pepper, curry powder, green chilli and tomat paste to thicken it.
4. Add in your preboiled beef and let it simmer before removing from the fire.

Method for mukimo
1. Boil a mixture of green maize and potatoes until they are soft.
2. Before removing it from the fire, add in spinach and let it cook briefly before mashing them all together.
3. In a separate pan, fry onions in butter and add in maggi cubes.
4. Add your the mashed mukimo and stir it throughly.
5. Serve while hot with your wet fry spicy beef and steamed cabbage.

RECIPE FOR CHICKEN KIEV

Ingredients
Chicken breasts
Garlic
Soy sauce
Lemon juice
Salt
Flour
Bread crumbs
Beaten Eggs

Method:
1. De-bone the chicken breast and season it with soy sauce, salt and lemon juice.
2. Separately, mix butter and chopped garlic, then stuff it inside the spread out chicken breast.
3. Fold it into an oval shape, then dust with flour.
4. Dip it into beaten eggs and the coat with breadcrumbs

NDENGU STEW (POJO) WITH SOFT CHAPATIS

METHOD FOR NDENGU STEW
1. Boil the pojo until cooked.
2. In a separate pan, fry onions, tomatoes, maggi cubes and tomato paste and keep stirring.
3. Add your boiled pojo and stir in some coconut milk

METHOD
1. Beef shaslicks are a combination of beef, chicken and fish pieces.
2. Marinate your chicken, fish and beef with soy sauce, garlic, ginger, salt and black pepper and let them sit in for some time.
