CHICKEN KEBABS

Ingredients
  • 4 eggs
  • 1/2 tspn salt
  • 1/2 lit oil
  • 1 cup flour
  •  2 red onions
  • 1/2 kg garlic
  • 1kg chicken
  • 1/2 cup bread crumbs
  • 1/2 tspn white pepper
Method
  1. Chop the garlic and onions finely. 
  2. Boil the chicken, de-bone and mince it.
  3. Put the chicken in a bowl and add 1/4 kg cup onions and 1/2 cup breadcrumbs.
  4. Add 1/2 tbl spoon garlic, 1/4 tspn salt, 1/2 tspn white pepper and 1 egg.
  5. In a 1/2 cup of bread crumbs, add 2 table spoon of water and mix well using your hands.
  6. Make elongated kebabs from the mixture, roll them in flour and dip in eggs.
  7. Finally fry them in oil.

MALA SALAD

Ingredients

  • Carrots
  • Onions
  • Cucumber
  • Lettuce
  • Tomatoes
  • Mala for dressing


Method

  1. Mix all the ingredients together
  2. Dress the mixture with sweetened mala and enjoy.

GARLIC BUTTER BREAD

Ingredients
Bread
Garlic
Parsley
Butter.

Method
  1. Blend garlic and butter
  2. Add parsley and finally apply the mixture on your bread
  3. Put it in the oven for 5 mins and enjoy!


POTATO CASSEROLE

Ingredients
1/2 kg potatoes
4 cloves of garlic
2 onions
Salt
Vegetable stock /water
Olive oil and black pepper

Method
  1. Peel, wash and cut the potatoes and onions in round slices.
  2. Peel the garlic and crush them. 
  3. Add the garlic to the oil and the stock to make a sauce.
  4. Place the potatoes and onions in layers in a dish and pour the sauce on them.
  5. Sprinkle black pepper on them and cover the dish with a lid and bake at 180c until tender. 
  6. Serve hot

RICE BURGER

INGREDIENTS
Rice
Black pepper
Garlic
Bread crumbs
Eggs.

METHOD
  1. Soak the rice in water for 30 mins meanwhile chop the garlic.
  2. In a pot,heat water with salt and boil the rice for 30 mins
  3. Drain and set aside.
  4. Combine garlic and black pepper and mix with rice, then shape them into burgers. 
  5. Dip in beaten eggs and coat them with breadcrumbs.
  6. Bake at 180c or deep fry until  golden brown.

SPICED POTATO BALLS

Ingredients
  • Potatoes
  • Garlic
  • Onions
  • Green chillis
  • Green peas
  • Green pepper
  • Curry powder
  • Salt
  • Eggs
  • Breadcrumbs
  • Coriander powder and oil
Method
  1. Boil the potatoes, green peas, carrots and green pepper. 
  2. Mash the potatoes and add the rest of the ingredients and mix well. 
  3. Mould them into balls and dip them in beaten eggs
  4. Coat with breadcrumbs and finally deep fry until golden brown.

POTATOES WET FRY

Ingredients
  • potatoes
  • onions
  • tomato paste
  • tomatoes
  • green peas
  • cubes
  • garlic
  • oil
METHOD
  1. Fry the onions, garlic n tomatoes
  2. Add tomato paste and cubes, then stir
  3. Add potatoes and peas
  4. Cover and let it cook until the potatoes are soft.

COLESLAW SALAD

INGREDIENTS

  • Cabbage
  • Carrots
  • Mayonnaise
  • Salt
Method
  1. Dice the cabbage and grate the carrots 
  2. Mix them and add a little salt
  3. Press to remove water
  4. Add mayonnaise, mix well and serve.

POTATO CROQUETTES

INGREDIENTS
  • Boiled potatoes
  • Milk
  • Flour
  • Eggs
  • Oil
  • Breadcrumbs/nutmeg and salt
Method
  1. Mash the potatoes and mix with milk, flour and eggs
  2. Add nutmeg and salt to taste
  3. Form into croquettes
  4. Dip in a beaten eggs and coat with breadcrumbs
  5. Deep fry until golden brown

MEXICAN SALAD

Ingredients
  • Cucumber
  • Tomato
  • Lettuce
  • Carrots
  • Black olives
  • Green peas 
  • Lemon juice/olive oil
Method
  1. Wash, peel and cut the carrots and cucumbers
  2. Wash and cut the tomatoes and lettuce[whole]
  3. Boil peas and let them cool
  4. Arrange all the ingredients on a plate and sprinkle with salt and olive oil.
  5. Enjoy!

MIXED VEGETABLES

INGREDIENTS
Carrots
French beans
Green peas

METHOD
  1. Pa-boil in a bi-carbonated water for a few minutes
  2. Remove and pass through cold water
  3. Fry the onions, tomatoes and garlic.
  4. Stir and add maggi cubes
  5. Finally add the veggies and cook for a few minutes.

EGG PLANT 'STEAK'

INGREDIENTS
Eggplant 1 medium size
Eggs 2 pieces
Salt
Aromat
Maggi Cubes

METHOD
  1. Blanch the eggplants in oil until tender
  2. Remove the skin
  3. Mash them and add beaten eggs
  4. Pan fry and serve while hot.

PUMPKINS

  1. Peel, wash and chop the pumpkins
  2. Prepare the tomato sauce/specialty
  3. Boil pumpkin in salted water until they are tender.
  4. Rinse/ Drain the pumpkins and sauté in oil.
  5. Add tomato sauce
  6. Cook for 10 min on low heat.

MACARONI WITH CRUMBED CHICKEN

Method
1. Boil the macaroni in salty water, remove and run through cold water.
2. Fry them with onions, carrots and tomatoes.
3. For the chicken, season with lemon juice, salt, soy sauce, then dip in a beaten egg and coat with flour.
4. Deep fry untill golden brown.


OAT MEDALLION

Ingredients
100g oats
1/2 litre milk
4 eggs
100g flour
Lemon juice 
Salt
METHOD
1. Soak the oats in milk for 30 min.
2. Boil the eggs and chop them. 
3. Boil milk and oats for 10 mins, stirring continuously to avoid sticking. 
4. Add flour and salt and boil for a few minutes, the mixture should be sticky.
5. Remove and add eggs and lemon juice. 
6. Cut it into your desired shape/mould.
7. Roll in beaten eggs and flour then fry in hot oil until golden brown.

DRY BEEF WITH CHIPS AND VEGGIES

Method
1. Boil the beef in its own water until tender and until the water drys out.
2. In a separate pan, fry crushed garlic, ginger, onions, black pepper and green chilis.
3. Stir and add beef cubes then add the beef and stir continuously until it becomes dry.
4. Serve with chips and veggies.

Method
1.Fry the onions, tomatoes and maggi cubes.
2. Add the potatoes and tomato paste.
3. Stir and add coriander powder clove and stir but stir constantly to avoid sticking.

WHITE ONION SALAD

Method
Cut the onions into rings mix with some carrots and sweet pepper.
Season with vinegar and salt and garnish with cucumber.

HOME MADE MAYONNAISE

Ingredients 
2 egg yolks
1 tbsp vinegar/ lemon juice
1/4 tsp black pepper
1/2 tsp salt, 1/4 cup oil
1/2 tbsp mustard
1/2 tbs sugar.
 METHOD >>>
1. Put raw yolk in a glass bowl, add salt, mustard and black pepper and stir as you add oil drop by drop. 
2. Stir slowly, always in the same direction, add a few drops of vinegar/ lemon juice drop by drop adding oil stirring continuously till the sauce is of good consistence.
3. Finally stir in 3 drops of cold water, make in a cool place or make sure you have a wet cloth under the glass bowl. If the sauce curdles, add a few drops of water and whisk briskly.

CINNAMON MANDAZI WITH EGGS

Method
1.Mix flour with sugar and baking powder first, then add eggs and butter and mix well. 
2.In a separate bowl, mix water and milk and add to the mixture[dough] and start kneading until the dough is not sticky anymore.
3. Leave the dough for 1 hr to improve under a wet cloth, then spread the dough and start kneading using a rolling pin.
4. Cut the dough to your desired shape and fry them.
5. Make sure the oil is hot to avoid being soggy, fry until both sides are golden brown.

GITHERI

Ingredients
Yellow maize, white beans, potatoes and beef. 

METHOD
1. First boil the beans and maize and set aside.
2. In a sufuria, fry the beef with tomatoes, onions and garlic.
3. Add the potatoes and when they are almost ready, add the beans and maize.
4. Stir and add maggi cubes, curry powder, coriander powder, salt and tomato paste, stir and let it simmer for 15 mins until it thickens.

OVEN ROAST CHICKEN WITH ROAST POTATOES AND GREENS

Method
1.Marinade the chicken with garlic, ginger,oyster sauce, black pepper, soy sauce, vinegar salt and tomato ketchup

1. Blanch in moderate oil till they become soft.
2. Re-heat the oil and deep fry them until they become crispy.

BEEF BIRYANI WITH YOGHURT SALAD.

Ingredients
- Rice 1kg
- Beef 1/2kg
- 3 Big tomatoes 
- 4 Big onions
- ginger 1 pc
- garlic bulb 5pcs
- sour milk mala 2 cups
- biriyani masala
- salt to taste
METHOD>>>>
1. Make the rice the usual way and in the boiling water add either saffron or tumeric powder and let the rice cook. 
2. Blend ginger and garlic and add 3 teaspoon of biriyani masala. 
3. Put the mixture in a bowl and add the beef, 4 teaspoon tomato paste, tomatoes and mala, then refrigerate overnight.
4. Cut the onions into rings and deep fry till they are golden brown and keep aside. 
5. In a sufuria fry the beef in moderate heat to let the beef cook well and add salt stirring continuously, 6. Add onions and let them cook, note that some people do add potatoes. 

YOGHURT SALAD >>>>Cut the cucumbers, tomatoes, carrots and onions into small cubes then mix with yoghurt or mala with a little sugar.

FRIED OKRA WITH UGALI AND EGGS

1. Fry onions, garlic and tomatoes and stir them.tomatoes stir and then
2. Add maggi cubes and stir then finally  add okra and let it cook for 15 min.
3. Fry your eggs with onions, tomatoes and capsicum(pili pili hoho) then serve hot with ugali and okra.

Method
Aliya is the Luo's traditional beef.
1. Roast the beef with salt then sun dry it for 4 days.
2. After that, fry in tomatoes and onions and add ghee.

1.Make a mixture of flour, milk, eggs and sugar.

1. Wash the matumbo and let it boil with its own water until soft.
2. Add garlic, cubes and tomatoes then let it to simmer. 
3. For Kundera, fry the onions, add sodium bicarbonate before adding your kunde and mrenda and let them cook.
4. Serve hot with ugali and matumbo.
