PARSLEY POTATOES RECIPE WITH BEEF AND CHICKEN

METHOD FOR PARSLEY POTATOES
1. Peel you potatoes and leave them whole.
2. Boil them in salty water until they are soft.
3. In a separate pan, toss them with butter and sprinkle freshly chopped parsley.

METHOD FOR THE BEEF AND CHICKEN
1. De-bone the chicken breast then cut it into julienne.
3. Do the same for beef but if you not using fillet, boil it first until its tender them marinate it with garlic, ginger, soy sauce, oil and salt and put it aside.
3. Cut the carrots, green pepper and onions into julienne.
4. Heat a pan with oil and fry onions and garlic.
5. Add the chicken and beef and stir fry as you add salt and cubes to taste.
6. Sprinkle them with soy sauce and serve while hot with parsley potatoes and your choice vegetables.

THE KING'S SPANISH PANCAKE RECIPE

METHOD
Mix flour, milk, salt, eggs and wheat flour.
Grate carrots and cucumbers and chop some tomatoes and add them into your batter and pan fry on both sides until they are golden brown.
 Served Spanish Pancake



BEEF GRATIN WITH VEGETABLE RICE AND GREENS

BEEF GRATIN METHOD
1. Boil the beef until its tender then fry with onions, garlic, mushrooms, black pepper and salt to
2. Grate cheese on top of the beef and put it in the oven to melt.

NB For this kind of dish u can use nay vegetable you like, i have used mushrooms in this recipe. 

VEGETABLE RICE METHOD
Boil rice normally and when its cooked, add chopped carrots, green pepper and tomatoes.

GREENS METHOD
Boil in either salty water or bi-carbonated water, then fry with onions, tomatoes adding maggi cubes and salt to taste.


HOW TO MARINATE YOUR CHICKEN AND ROAST IT

METHOD
1. Get salt, oyster sauce,vinegar,banana sauce and soy sauce
2. Clean and cut your chicken into quarters.
3. Marinate them using salt, soy sauce, oyster sauce, banana sauce and vinegar.
4. Arrange them on a tray and bake them in the oven at 180 degrees Celsius.
5. Roasted Chicken






FRIED CHICKEN WITH RICE AND VEGETABLES

FRIED CHICKEN RECIPE
1. Marinate your chicken with crushed garlic and ginger and season with lemon juice,soy sauce and salt.
2. Shallow fry in a medium heat stirring occasionally
3. Add onions and stir until golden brown
4. Remove from the heat and serve and don't it be too dry



CRUMBED FISH FILLET SERVED WITH LYONNAISE POTATOES AND VEGGIES





CRUMBED FISH FILLET METHOD
1. Season the fish fillet with mustard, soy sauce, lemon juice and salt.
2. Dust it with flour, then dip in a beaten egg and finally coat it with breadcrumbs
3. Pan fry till golden brown.

 LYONNAISE POTATOES METHOD
1. Peel the potatoes and cut them into circles
2. Blanch them and deep fry till crispy.
3. Pan fry them with onions

VEGGIES RECIPE
1. Pre-boil them in bi-carbonated water for a few seconds
2. Fry them with onions

Serve the fish fillet, lyonnaise potatoes and veggies with The Queen's salad. To make the Queens Salad, cut the condiments into uniform cubes, season with soy sauce, vinegar and salt.


GRILLED ONION STEAK SERVED WITH LYONNAISE POTATOES AND KACHUMBARI.

RECIPE FOR GRILLED ONION STEAK
METHOD
1. Marinate the steak with garlic, ginger, soy sauce, salt and oil  for at least 2hrs.
2. Grill it in moderate heat or pan fry it util its cooked on both sides

METHOD FOR LYONNAISE POTATOES
1.Peel the potatoes and cut them into thin round shapes.
2. Blanch them either in hot water or oil, then deep fry them until they are cooked.
3.Pan fry them in onions.

METHOD FOR KACHUMBARI
Slice the onions and wash them in salty warm water.
Mix them with sliced tomatoes and green chillis
Finally, season with lemon juice before serving.

BEEF SHAWARMA RECIPE

Method
1. Boil the meat
2. Fry in onion and garlic, then add mayonnaise to it.
3. Add beaten eggs
4. Arrange your naan and stuff with the meat and finally roll the naan to cover the meat.
5. You can also add your preferred vegetables in the stuffing.







Chicken Peri Peri Recipe

Ingredients for the Hot Sauce
  • Chopped chilli
  • Black pepper
  • Hot pepper seeds removed and crushed
  • Tomato
  • Tabasco
  • Chilli powder
  • White pepper
  • Salt,
  • Tomato paste 
  • Garlic crushed,
  • Chopped onion
Method
1. Blend all the ingredients except, tabasco and tomato paste
2. Meanwhile fry onions and garlic together, then add the rest of the blended ingredients u were blending and let is simmer
3. The chicken should be skinless and you can prepare it in two ways. You can either deep fry it or bring it to boil[without putting any water, it will produce its own water].
4. When the chicken is ready, add it to your hot sauce and let it simmer until almost dry
5. Remove and serve while still hot.


recipe for chicken curry in coconut sauce

Ingredients

  • 2 Tbsps veg oil
  • 1 whole onion chopped, 
  • 2 Clove garlic crushed, 
  • 1 kg chicken[skinless[optional] 
  • 1 small head cauliflower chopped,
  • 1 tsp salt 
  • 2 1/2 Tbsps curry powder, 
  • 150g coconut milk powder dissolved in a 300ml water & strain, 
  • 1/3 cup chicken stock, salt n pepper to taste, 
  • 1 Tbsps chicken masala.
Method
1. Heat the oil in a sufuria and stir in the onions and garlic and cook until tender
2. Mix in the chicken and cook until juice runs clear
3. Mix cauliflower,chicken masala and curry powder in the sufuria, 
4. Pour in the coconut milk and chicken stock and then season with salt and pepper. 
5. Reduce the heat and continue stirring occasionally for 30 min.
6. Remove and serve with vegetable rice and vegetables.


Recipe for Mahamri Coastal style

Ingredients

  • 500g flour
  • 100g sugar
  • 50ml water,
  • 100ml milk,
  • 30g yeast[dry]
  • 5 cloves cardamon.
Method
1. In a large bowl, pour in the flour and mix the sugar, milk & yeast, 
2. Gradually add water and mix into a dough
3. Add the cardamon seeds into the dough n keep mixing. 
4. Knead for 30min, once done (it should be sticky but not too much) sprinkle some flour on the dough and knead again for a few minutes. 
5. Split the dough into 5 dough balls, cover them and let them rise 
6. After 40min it should be ready then sprinkle some flour on the table and roll them into circles one by one, 7. Cut into 2 once rolled out to make the triangle shapes.(Each circle should give you 4 mahamris)
8.  Heat up the oil  for about 5 minutes then dip them in and fry them until they are golden brown.


CHICKEN LOLLIPOP (CHICKEN DRUMSTICK) WITH POTATO SALAD

CHICKEN LOLLIPOP AKA CHICKEN DRUMSTICK WITH POTATO SALAD


METHOD FOR POTATO SALAD
1. Boil the potatoes until soft
2. Remove from fire and let them cool
3. Cut your condiments and add them to the potatoes in a bowl
4. Mix with mayonnaise


METHOD FOR CHICKEN LOLLIPOP
1. Cut the chicken drum stick next to edge of the thigh bone
2. Push the meat upwards to cover the top part (its supposed to turn inside out as it nears the top)
3. Season with soy sauce, salt, coriander powder, garam masala and lemon juice.
4. Dust the chicken with flour and dip in it a beaten egg, then coat with breadcrumbs.
5. Deep fry in a moderate fire until they turn golden brown.


Serve when hot with potato salad.

Rice with Cucumber Curry

Method for Cucumber Curry
1. First make the curry by frying onions, garlic, tomatoes and ginger.
2. Add chilli powder, garam masala and tomato paste and stir them thoroughly.
3. Add ajino moto and beef cubes to taste 
4. Lastly add the chopped cucumbers and stir for a few seconds and serve while hot with rice.

Home made Mango Ice Cream

Ingredients
- 1 Cup sugar
- 1 Cup Mango juice
- 11/2 Cup whipping Cream
- 1 tin condensed milk

Method
1. Mix the mango juice and sugar in a blender until it's all dissolved and set aside
2. Put the whipping cream in a bowl and whisk it until it forms a stiff peak
3. Gently pour the condensed milk, milk and mango juice mixture into the whipped cream and cover the bowl
4. Put in the fridge until it's frozen or at least for 2 hours.
5. Remove it from the fridge and blend it quickly until it's smooth
6. Return it to the fridge and let it be frozen once again.
7. Remove it from the fridge just a few minutes before serving.

Cinnamon pancakes

Method
In a bowl, mix wheat flour, milk, eggs and cinnamon and pan fry them.


Fried Aubergines aka Egg Plants

Method
Mix wheat flour, eggs, milk, black pepper, and either sugar or salt depending on your choice. 
Cut the eggplants into small cubes and dip them in the mixture and then coat with breadcrumbs.
Deep fry them until they are crispy.


Recipe for Chicken gizzards Bofis served with greens and rice

Method for the Chicken Gizzard Bofis 
1. Boil the gizzards until they are tender.
2. Cut the carrots, green pepper and tomatoes into cubes
3. Sauté them in garlic, onions and tomatoes
4. Add the gizzard and let it simmer
5. Add green chillies and tomato paste and stir until it thickens
6. Remove and serve while hot with rice and greens.


Recipe for Royal pancakes

Method
-Wheat flour
-Sugar
-Sweet corn
-Eggs
-Mushrooms
-Milk

Method
Mix all the ingredients together and stir them thoroughly.
Pour the mixture a little at a time onto a hot pan with oil and cook both sides until browned


Recipe for Soft Coconut chapatis

Ingredients
-2 cups wheat flour
-1/4 cup cooking oil
-1 tsp sugar
-1tsp salt
-1 Cup coconut milk
-Oil for frying

Method
Sieve the flour into a bowl and add in salt, sugar and oil and mix them thoroughly
Make a hole in the middle and pour in the coconut milk
Knead into into a smooth dough
Let the dough rest for at least an hour before cooking so that your chapatis come out so soft and in layers
After the 1 hour, Spread out the dough using a rolling pin and brush it with oil
Cut it into stripes and roll them into 10 balls
Make sure it's not sticky
Roll them into round shapes
Heat oil in a pan and cook the chapatis until both sides are browned



Recipe for Chicken in Lime served with soft chapatis and Coleslaw salad

Ingredients
-1/2kg Chicken cut into pieces
-2 Cloves Crushed garlic 
-4 Lime pieces
-1/2 tsp salt
-1 tsp soy sauce
-1 large chopped onion

Method for the Chicken
Heat oil in a pan and add in onions, garlic, tomatoes and lime juice and fry gently for at least 5 minutes.
Stir in the chicken pieces.
In a separate bowl, dissolve a little sugar, soy sauce, salt and pepper and pour in the mixture onto the chicken, cover it with a lid and let it cook until it's almost dry.
You can add some lime juice if it's too dry.
Serve with Chapati and Coleslaw salad.





Recipe for Okra in Wet Beef fry served with twin rice

Ingredients
Chopped garlic and ginger, chopped onions, tomatoes, tomato paste, salt, maggi cubes, sliced okra and chopped onions.

Method for the Wet Beef Fry
1. Boil the beef until it's tender.
2. Add garlic, ginger, onions, tomatoes, maggi cubes and salt and stir occasionally.
3. Add tomato paste and let it simmer.
4. Lastly, add the okra (lady fingers) and let them cook until the soup is almost dry but let the beef remain wet.

Method for white rice
Cook the rice normally and set aside

Method for the Saffron rice
Bring your rice water to boil and add saffron powder into it.When your rice is ready, add in the condiments and mix well.

When serving, fill half of the plate with white rice and the rest of it with saffron rice and serve with the wet beef fry.

Recipe for Egg and Sausage Curry served with Pasta

Method for Egg curry

1. Boil the eggs and chop them and be careful not to over boil the eggs so that they do not break
2. Remove the egg yolk and set the egg white aside.
3. Fry onions, crushed garlic and tomatoes
4. Add curry powder, black pepper, tomato paste, chilli powder, salt and maggi cubes
5. Stir in the egg whites and slic cooked sausages.
6. Serve with pasta and  garnish with coriander.

Chicken Tocino served with greens and roast potatoes

Method for the Chicken Tocino
1. Marinate your boneless chicken on light soy sauce, sugar syrup, pineapple juice, vinegar, salt and food colour for at least an hour
2. Pan fry under low heat or grill under moderate heat.

Method for the Greens
Pre-boil them a little in bicarbonated water before frying them with onions and tomatoes

Method for the Roast Potatoes
Blanche them before deep frying, shallow frying or baking them in the oven until they are tender


Beef Escalope served with Jacket Potatoes, mixed vegetables and pepper sauce

Method for Beef Escalope
1. Cube your beef stake and marinate it with garlic, soy sauce, oil, black pepper and salt for 1 hour
2. Dip the marinated pieces in a beaten egg and coat them with bread crumbs
3. Shallow fry them and put them aside

Method for Jacket Potatoes
1. Boil the potatoes until they are soft
2. Wrap them with a paper foil and roast them in the oven
3. When ready, cut the top open and put in some garlic butter and let it melt




Recipe for fish curry with vegetable rice and salad

BONELESS FISH CURRY SERVED WITH VEGETABLE RICE N MIXED SALAD

METHOD

Fish Fillet

1. Cut the fish fillet into cubes
2. Coat with flour then deep fry
3. Set aside

HOW TO MAKE THE CURRY SAUCE
1. Fry onions and garlic until golden brown
2. Add tomatoes and stir continuously
3. Add curry powder, chilli powder, black pepper, maggi cubes, salt and tomato paste
4. Give it a good stir until well mixed
5. Add the fish and stir it in for a few minutes and remove

Mixed Salad

Cut Cucumbers and Tomatoes and season them with vinegar and salt.

Recipe for Beef Pachero

Ingredients

-1/2kg Beef
-2 large onions chopped
-4 cups beef stock/water
-1 Tbsp cooking oil
-3 carrots cut into pieces
-2 cloves garlic chopped
-1 cup tomato sauce (optional)
-1 piece cabbage sliced
-2 medium potatoes quartered.

Method

1. Boil the beef and onions in little water until it's tender
2. Sautée garlic in a different cooking pot and add tomato sauce, cabbage and beef and let it simmer
3. Pour 3 cups of broth/stock and the remaining vegetables and let it cook
4. Remove and serve with rice.


Recipe for Yummy meat kebabs

Ingredients
-1 Kg ground meat (minced meat)
-Crushed garlic cloves
-Chopped onions
-Black pepper
-Soy sauce
-Butter 
-Bread crumbs
-Beaten eggs

Method:
Mix all the ingredients together in a bowl and add the bread crumbs continuously.
Shape the mixture into rolls or your desired shape
Shallow fry them under low heat.If the heat is too much, the kebabs will be burnt on the outside and uncooked inside.
Serve while hot with vegetable salad.


How to make Bread Crumbs at home

Method:

1. Cut your bread into small pieces
2. Place it into a tray and put it into the oven
3. Bake it at 300 degrees Farenheit for at least 10 minutes until they are slightly burnt
4. Put them in a blender after they have cooled and let them grind to your preferred texture.


Recipe for Spanish Omelette with Sausages

Method:

Cut onions, tomatoes and green pepper into small cubes.
Cut your already cooked sausages into small pieces.
Add the sausage mix in beaten eggs.  
Fry the mixture in a pan under low heat.

How to prepare beef fry with roast potatoes

Beef fry Method:
Boil the beef until it's tender
In a pan, fry onions, ginger, garlic and tomatoes and keep stirring
Add tomato paste, beef and salt to taste and stir them together.

Roasted Potatoes Method
Boil the potato cubes until tender then deep fry them
You can also deep fry them directly on low heat.
